1/2 cup mayonnaise

1/4 cup sour cream

2 green onions, thinly sliced (white and light green parts only)

1 tablespoons fresh lime juice, or to taste

Salt and freshly ground black pepper, to taste

French fries (page 175)

10–12 sausages or frankfurters of your choice, fried or grilled and sliced

Mustard

Ketchup

Pickle relish

In a blender, combine the ají paste, mayonnaise, sour cream, green onions, and lime juice; blend until smooth. Transfer to a small bowl, season with salt and pepper, and chill until ready to use.

Make the French fries and slice the cooked sausages; toss them together and place them on a large platter (or on individual plates). Serve with the ají amarillo sauce, mustard, ketchup, and pickle relish.
